Sweet & SpIcY Sriracha Tofu

S/O TO YOU VEGETARIANS. This was my first time cooking tofu, and it turned out so yummy! I used medium firm tofu, but you can use extra firm depending on what you prefer.

Sweet & Spicy Sriracha Tofu

Prep Time: 10 minutes    Cook Time: 20 minutes     Servings: 4

Ingredients: 

1 Block of firm tofu

1 cup of broccoli

1/3 cup cornstarch

2 tbsp oil

Sauce:

1 cup of water

1/4 cup reduced sodium soy sauce

1/4 cup white granulated sugar

2 tbsp of Sriracha (more or less depending how much spice you like)

3 cloves garlic, minced

2 tbsp + 2 tbsp of cornstarch

Steps: 

  1. Start boiling water in a small pot.
  2. Rinse tofu in a colander and apply pressure with a heavier object (can of beans or sumthin) to drain any liquids. ~10 mins.
  3. Chop tofu longways in three layers, then dice those layers into ~1 inch cubes.
  4. Cover the tofu cubes in cornstarch. Sauté all four sides with oil until lightly brown.
  5. Throw your chopped broccoli in the boiling water and boil for a few minutes. Once cooked, drain in colander and set aside.
  6. While tofu and broccoli cook, mince garlic. Add garlic, water, soy sauce, sugar, and Sriracha into a saucepan. Bring to a boil.
  7. Mix cornstarch and water together in a small bowl. Pour into sauce mixture and stir well to create a thicker consistency.
  8. Combine broccoli and tofu, and toss with sauce. Serve with a bed of rice!!!

My Sunday consisted of cleaning, cooking, and watching Pitch Perfect. Fat Amy literally makes me cry from laughing so hard.

This week I’m going to try to incorporate my workouts BEFORE work…..which means waking up at 5 am ~cringe~.
